Peel and mince 2 cloves of garlic and a 1-inch piece of fresh ginger.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the minced garlic and ginger to the pan, stirring for about 30 seconds until fragrant.
Add the lean ground turkey to the pan, breaking it apart with a spatula, and cook until browned and fully cooked through, about 5-7 minutes.
Add the 200 g of mixed vegetables to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
Pour 1 tablespoon of low-sodium soy sauce and 1 teaspoon of sesame oil over the mixture, stirring to combine the flavors.
Add the 150 g of cooked brown rice to the skillet, mixing everything until the rice is heated through.
Season with salt and black pepper to taste, then serve hot.
