Mince the garlic cloves and grate the ginger.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
Add the minced garlic and grated ginger to the skillet, and sauté for 1 minute until fragrant.
Add the lean ground turkey to the skillet, breaking it apart with a spatula, and cook for 5-6 minutes until browned and cooked through.
Add the mixed vegetables (broccoli, bell pepper, carrot) to the skillet and stir-fry for about 4-5 minutes until they are tender but still crisp.
Pour in the low-sodium soy sauce and sesame oil, stirring to combine with the turkey and vegetables.
Add the cooked brown rice to the skillet and stir to mix all ingredients thoroughly.
Season with salt and black pepper, then stir everything well to ensure even seasoning.
Cook everything for another 2 minutes until the rice is heated through.
Serve the stir-fry hot, dividing into two equal portions.
