Ingredients

  • 150 g Chicken breast, boneless skinless
  • 90 g Quinoa, cooked
  • 75 g Ripe avocado
  • 30 g Feta cheese
  • 50 g Mixed salad greens
  • 50 g Cherry tomatoes
  • 50 g Cucumber
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • to taste N/A Salt
  • to taste N/A Black pepper
  • 1 tsp Dried oregano

Instructions

Preheat a grill pan or outdoor grill to medium-high heat.

Season the chicken breast with salt, black pepper, and 1/2 teaspoon of dried oregano.

Brush the grill with a bit of olive oil to prevent sticking. Grill the chicken for 5–7 minutes on each side until fully cooked and nicely charred. Internal temperature should reach 165°F (75°C). Remove from the grill and let it rest.

While the chicken is grilling, prepare the salad. Halve the cherry tomatoes, dice the cucumber, and peel and slice the avocado.

In a large mixing bowl, combine the cooked quinoa, salad greens, cherry tomatoes, cucumber, and avocado.

Crumble feta cheese over the salad mixture.

In a small bowl, whisk together the olive oil, lemon juice, remaining 1/2 teaspoon of dried oregano, salt, and pepper to make the dressing.

Pour the dressing over the salad and toss gently to combine.

Slice the rested chicken breast and place it on top of the salad.

Serve the salad immediately and enjoy!
