Cook the noodles according to package instructions until al dente. Drain and set aside.
In a large pan, heat the oil over medium heat. Add minced garlic and finely chopped onion. Cook until the onion becomes translucent (about 3 minutes).
Stir in the butter and let it melt. Add in the flour and stir continuously to form a roux, cooking for 1-2 minutes.
Slowly whisk in the milk, ensuring there are no lumps. Continue to whisk until the sauce thickens (about 5 minutes).
Add the shredded cheese to the sauce, stirring until it's fully melted and the sauce is smooth. Stir in the sugar, and season with salt and pepper to taste.
Add the cooked noodles to the sauce, stirring to ensure the noodles are fully coated. Cook for another 2-3 minutes to heat the noodles through.
Serve hot, garnished with additional cheese or chopped fresh herbs if desired.
