Ingredients

  • 200 g paneer (Indian cottage cheese)
  • 2 cups fresh spinach leaves
  • 1/4 cup cream
  • 1 medium, chopped onion
  • 1 medium, chopped tomato
  • 2 tbsp oil or ghee
  • 2 cloves, minced garlic
  • 1 inch, minced ginger
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • to taste optional salt
  • 1/2 cup water

Instructions

Blanch the spinach leaves in boiling water for 2-3 minutes until wilted. Drain, refresh with cold water, and blend into a smooth paste.

Heat 2 tbsp of oil or ghee in a pan over medium heat. Add cumin seeds and allow them to splutter.

Add minced garlic and ginger. Sauté for 1 minute until fragrant.

Add chopped onions and sauté until they turn golden brown.

Add chopped tomatoes, turmeric powder, and chili powder. Cook until the tomatoes become soft and oil starts to release from the sides.

Add the spinach puree to the pan and mix well. Cook for 5 minutes, stirring occasionally.

Add salt to taste and garam masala. Stir to combine.

Lower the heat, add 1/4 cup of cream and mix well. Add water to achieve your desired consistency, and simmer for an additional 3-4 minutes.

Gently fold in the paneer cubes and cook for another 3-4 minutes, taking care not to break the paneer.

Serve hot with rice or naan, optionally garnished with fresh cream or coriander leaves.
