Preheat the oven to 375°F (190°C).
Cut the chicken breast into bite-sized pieces and season with salt and pepper.
In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add butter and let it melt. Finely chop the onion and mince the garlic, then add them to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.
Sprinkle the flour over the onion and garlic mixture and stir well to coat. Cook for another 1-2 minutes to remove the raw flour taste.
Slowly pour in the milk while continuously stirring to avoid lumps. Continue to cook and stir until the mixture thickens into a sauce, about 3-4 minutes.
Stir in 1 1/2 cups of cheddar cheese into the sauce until melted and smooth. Adjust seasoning with more salt and pepper if needed.
Combine the cooked chicken with the cheesy sauce, mixing well to ensure all pieces are coated evenly.
Transfer the chicken and sauce mixture into a baking dish. Sprinkle the top with the remaining 1/2 cup of cheddar cheese followed by breadcrumbs for a crispy topping.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
Remove from the oven and let it cool for a few minutes before serving. Enjoy your Cheesy Chicken Casserole!
