Preheat your oven to 375°F (190°C).
In a medium saucepan, bring the 2 cups of water to a boil. Add the rice and a pinch of salt, lower the heat to a simmer, cover, and cook for about 15 minutes or until the rice is tender and all the water is absorbed.
While the rice is cooking, cut the chicken breast into 1-inch cubes and season with salt and pepper.
Melt 1 tablespoon of butter in a large skillet over medium heat. Add the chicken pieces and cook until no longer pink, about 8-10 minutes.
In a large mixing bowl, whisk together the eggs and milk until well combined.
Melt the remaining tablespoon of butter in a small saucepan over medium heat. Stir in the milk and bring to a gentle simmer. Gradually add 1.5 cups of cheddar cheese, stirring constantly until the cheese is melted and the sauce is smooth.
Add the cooked rice and chicken to the cheese sauce, stirring to combine thoroughly.
Transfer the mixture to a greased baking dish. Top with the remaining 0.5 cup of cheddar cheese.
Bake in the preheated oven for 15 minutes, or until the cheese on top is bubbly and golden brown.
Let the dish cool for a few minutes before serving.
