Preheat the oven to 375°F (190°C).
In a small bowl, mix together the olive oil, fresh rosemary, fresh thyme, salt, and black pepper to make an herb marinade.
Rub the herb marinade all over the pork loin, ensuring it is evenly coated.
Heat a skillet over medium-high heat and sear the pork loin on all sides until browned, about 2-3 minutes per side.
Transfer the pork loin to a baking dish and place it in the preheated oven. Roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
While the pork is cooking, keep the mashed potatoes warm.
Steam the green beans until tender, but still bright green, about 5-7 minutes if not pre-steamed.
Once the pork loin is cooked, remove it from the oven and let it rest for 5 minutes before slicing.
Slice the pork loin and serve it alongside the mashed potatoes and steamed green beans.
