Ingredients

  • 340 g leg of lamb, bone-in or boneless
  • 250 g mixed root vegetables (carrot, parsnip, beet)
  • 200 g green beans
  • 3 tbsp olive oil
  • 3 cloves garlic, cloves
  • 2 tbsp fresh rosemary, chopped
  • 1 1/2 tsp salt
  • 1 tsp black pepper

Instructions

Preheat the oven to 180°C (350°F).

In a small bowl, mix 2 tablespoons of olive oil, chopped rosemary, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mince 2 cloves of garlic and add to the mixture.

Rub the lamb with the rosemary and garlic mixture, ensuring all sides are coated. Place the lamb in a roasting pan.

Peel and cut the root vegetables into even chunks. Toss them with the remaining 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Slice the remaining garlic clove and mix with the vegetables.

Place the root vegetables around the lamb in the roasting pan.

Roast in the oven for about 1 hour, or until the lamb reaches an internal temperature of 60°C (140°F) for medium-rare. Stir the vegetables halfway through cooking.

While the lamb is roasting, trim the ends off the green beans.

With about 10 minutes of cooking time left for the lamb, bring a pot of salted water to a boil and blanch the green beans for 3-4 minutes, until bright green and tender-crisp. Drain and set aside.

Once the lamb is cooked, remove it from the oven and let it rest for at least 10 minutes before slicing.

While the lamb is resting, add the green beans to the roasting pan with the root vegetables and toss to coat in the roasting juices.

Slice the lamb and serve with the garlic roasted roots and green beans.
