Ingredients

  • 340 g leg of lamb
  • 250 g mixed root vegetables (carrot, parsnip, beet)
  • 200 g green beans
  • 3 tbsp olive oil
  • 3 pieces garlic cloves
  • 2 sprigs fresh rosemary
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 cup water (for steaming)

Instructions

Preheat the oven to 180°C (350°F).

In a small bowl, mix 2 tablespoons of olive oil, minced garlic cloves, chopped fresh rosemary, salt, and pepper. Rub this mixture all over the lamb, ensuring it's well coated.

Place the seasoned leg of lamb on a roasting rack in a roasting pan.

Roast the lamb in the preheated oven for about 60 minutes or until it reaches an internal temperature of 145°F (63°C) for medium-rare. Adjust cooking time according to your preferred level of doneness (e.g., 160°F for medium).

While the lamb is roasting, peel and chop the root vegetables into bite-sized pieces. Toss them with 1 tablespoon of olive oil, and a pinch of salt and pepper.

After the lamb has roasted for 30 minutes, add the root vegetables to the roasting pan around the lamb. Continue roasting for another 30 minutes, turning the vegetables halfway through.

Prepare a pot with 0.5 cup of water and bring it to a simmer. Add the green beans, cover, and steam for about 5-7 minutes until tender but still bright green.

Once done, remove the lamb from the oven, cover with foil, and let it rest for about 10 minutes before slicing.

In a skillet over medium heat, add any remaining olive oil and sauté the steamed green beans for about 2 minutes to enhance their flavor. Season with a little salt and pepper to taste.

Slice the lamb and serve it on a platter with roasted root vegetables and green beans on the side. Garnish with additional rosemary if desired.
