Ingredients

  • 340 g leg of lamb
  • 250 g mixed root vegetables (carrot, parsnip, beet)
  • 200 g green beans
  • 3 tbsp olive oil
  • 3 cloves garlic cloves
  • 2 sprigs fresh rosemary
  • to taste - salt
  • to taste - pepper

Instructions

Preheat your oven to 200°C (400°F).

Season the leg of lamb generously with salt and pepper. Rub with 1 tbsp of olive oil, 2 crushed garlic cloves, and the leaves from 1 sprig of fresh rosemary. Let the lamb sit at room temperature for 15 minutes to allow the flavors to infuse.

Cut the mixed root vegetables into uniform pieces. Place them in a bowl and toss with 1 tbsp of olive oil, salt, pepper, the remaining crushed garlic clove, and the leaves from the second sprig of rosemary.

Place the seasoned lamb on a roasting rack in a roasting pan. Arrange the root vegetables around the base of the rack. Roast in the preheated oven for about 1 hour until the internal temperature of the lamb reaches 60-65°C (140-150°F) for medium rare. Stir the vegetables halfway through roasting.

While the lamb and roots are roasting, trim the green beans and toss them with the remaining 1 tbsp of olive oil, salt, and pepper.

Once the lamb is cooked to your desired doneness, remove it from the oven and let it rest for 10-15 minutes before carving. While the lamb rests, increase the oven temperature to 220°C (425°F) and roast the green beans for about 10 minutes until tender and slightly charred.

Carve the rested lamb and serve it with the garlic roasted root vegetables and roasted green beans on the side.
