Heat the olive oil in a large saucepan over medium heat.
Add the diced onion to the pan and sauté for 3-4 minutes, until the onion becomes translucent.
Add the ground beef to the pan, breaking it apart with a wooden spoon, and cook until it's browned, about 5-7 minutes.
Stir in the chili powder, salt, and black pepper, ensuring the beef is well-coated with the spices.
Add the kidney beans, diced tomatoes (with their juices), and water to the pan. Stir to combine all ingredients.
Bring to a simmer, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, stirring occasionally, until the chili thickens.
Taste and adjust seasoning if necessary. Serve hot.
