In a medium saucepan, combine 1 cup of rolled oats, 2 cups of water or milk, 1/4 teaspoon of salt, and 1 teaspoon of cinnamon. Stir to combine.
Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally until the oats are soft and creamy.
While the oatmeal is cooking, chop the banana and apple into small pieces, and set aside.
Once the oatmeal is cooked, remove it from heat. Stir in the chopped banana, apple, blueberries, 2 tablespoons of honey or maple syrup, and 1 teaspoon of vanilla extract if using. Mix well until combined.
Serve the fruity oatmeal in bowls, and top with additional blueberries and the chopped nuts if desired. Enjoy your delicious and nutritious meal!
