Preheat your oven to 200°C (400°F).
Wash and dry the red potatoes. Cut them into quarters or bite-sized pieces.
In a large bowl, combine 2 tablespoons of olive oil, minced garlic, 1 teaspoon of rosemary, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Add the potatoes and toss to coat evenly.
Place the potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for 15 minutes.
While the potatoes are roasting, season the chicken breasts with 1 tablespoon of olive oil, 1 teaspoon of rosemary, 1 teaspoon of paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.
After 15 minutes, remove the baking sheet from the oven and push the potatoes to one side. Place the seasoned chicken breasts on the other side of the baking sheet.
Return the baking sheet to the oven and roast for an additional 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and crispy. The internal temperature of the chicken should reach 75°C (165°F).
Once cooked, remove from oven and let the chicken rest for a few minutes before serving. Garnish with fresh rosemary if desired.
