Start by seasoning the chicken thighs with salt and black pepper on both sides.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs and sear them until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, lower the heat to medium and add the chopped onions. Sauté until they are translucent, about 3-4 minutes.
Add minced garlic and grated ginger to the onions and sauté for another 2 minutes until fragrant.
Stir in the curry powder, allowing it to toast slightly with the onion mixture for about 1 minute.
Pour in the coconut milk and stir well to combine all the spices and flavors. Bring the mixture to a gentle simmer.
Return the chicken thighs to the skillet, spooning some of the curry sauce over the top. Cover the skillet and let the chicken simmer in the curry sauce for about 20-25 minutes or until cooked through.
Once cooked, sprinkle chopped fresh cilantro over the curry for garnish.
Serve the curry hot, optionally with a side of cauliflower rice or steamed vegetables for a complete Keto meal.
