Ingredients

  • 5 oz Chicken breast
  • 1 medium Sweet potato
  • 0.5 cup Light coconut milk
  • 0.75 cup cooked Brown rice
  • 1 small Onion
  • 2 cloves Garlic
  • 2 tbsp Curry paste
  • 1 tbsp Oil
  • 0.75 cup Water

Instructions

Start by peeling and cubing the sweet potato into 1/2-inch pieces, and finely chopping the onion and garlic.

Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Heat oil in a large pan over medium heat. Add the chopped onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.

Add the curry paste to the pan and cook for another minute, stirring constantly to enhance the flavor.

Add the cubed sweet potato and seasoned chicken to the pan, stirring to coat them with the curry mixture.

Pour in the light coconut milk and 3/4 cup of water. Stir everything together, bring to a boil, then reduce the heat to low and let simmer for about 15-20 minutes, or until the sweet potatoes are tender and the chicken is cooked through.

Add cooked brown rice to the mixture, stirring well to combine. Let it heat through for an additional 2-3 minutes.

Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh herbs if desired.
