Ingredients

  • 3 large eggs
  • 1 tablespoon oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh herbs (optional, like chives or parsley)

Instructions

Break the eggs into a bowl. Add salt and pepper. Using a fork or a whisk, beat the eggs until they are completely mixed and there are no streaks of egg whites.

Place a non-stick frying pan over medium-low heat. Add the oil and let it heat up for about a minute.

Pour the beaten eggs into the center of the pan. Using a spatula, stir the eggs very gently with a circular motion, while also shaking the pan back and forth, until the eggs start to thicken and form a smooth surface, about 1-2 minutes.

When the eggs are just set but still soft in the center, remove the pan from the heat. If using, sprinkle the fresh herbs evenly over the omelette.

Using the spatula, carefully fold the omelette in half. Slide it onto a plate and serve immediately.
