Ingredients

  • 2 pieces Ripe avocados
  • 4 slices Whole grain bread
  • 4 pieces Eggs
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 tablespoon Lemon juice
  • 1 teaspoon Red pepper flakes

Instructions

Bring a large pot of water to a simmer. Add a pinch of salt to the water to help the eggs hold their shape.

While waiting for the water to simmer, cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

Mash the avocado with a fork, adding the lemon juice, 1/4 teaspoon salt, and pepper to taste. Mix until smooth but still a bit chunky.

Toast the whole grain bread slices to your desired level of crispiness.

Crack each egg into a small bowl or cup to prepare them for poaching.

Once the water is simmering, create a gentle whirlpool with a spoon and gently slide each egg into the center. Cook for about 3-4 minutes for a softly poached egg.

Remove the poached eggs with a slotted spoon and place on a paper towel to drain any excess water.

Spread the mashed avocado evenly over the toasted bread slices.

Place a poached egg on top of each slice of avocado toast.
