Baked Salmon with Sweet Potatoes

Ingredients

  • 2 pieces salmon fillets
  • 2 pieces sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Peel the sweet potatoes and cut them into 1-inch cubes. Place them in a large mixing bowl.

Drizzle 1 tablespoon of olive oil over the sweet potatoes. Add 1/2 teaspoon of paprika, a pinch of salt, and a pinch of black pepper. Toss the sweet potatoes to coat them evenly with the oil and spices.

Spread the seasoned sweet potatoes in an even layer on one side of the prepared baking sheet.

Place the salmon fillets on the other side of the baking sheet. Brush each fillet with the remaining 1 tablespoon of olive oil. Sprinkle them with the remaining 1/2 teaspoon of paprika, and season with salt and black pepper to taste.

Bake in the preheated oven for 20-25 minutes or until the sweet potatoes are tender and the salmon is opaque and flakes easily with a fork.

Once done, remove the baking sheet from the oven. Let the salmon cool for a couple of minutes before serving. Serve the baked salmon with the roasted sweet potatoes on the side.
