Preheat your oven to 425°F (220°C).
Wash the sweet potatoes and cut them into 1/2-inch cubes. Place them on a baking sheet, drizzle with 1 tsp olive oil, and season with salt and pepper. Toss to coat evenly.
Place the sweet potatoes in the preheated oven and roast for about 35 minutes, turning halfway through, until they are tender and lightly browned.
While the sweet potatoes are roasting, prepare the salmon. Place the salmon fillets on a lined baking sheet. Squeeze half of the lemon over the fillets, sprinkle with salt and pepper, and top with chopped fresh dill.
Once the sweet potatoes have been in the oven for 15 minutes, add the salmon fillets to the oven. Bake them for 15-20 minutes, or until the salmon flakes easily with a fork.
In a large skillet over medium heat, add 2 tsp olive oil. Once hot, add the green beans. Season with salt and pepper and sauté for about 8-10 minutes, until tender and slightly blistered.
Once everything is cooked, plate the salmon with a side of roasted sweet potatoes and sautéed green beans. Garnish with additional lemon wedges and dill if desired.
