Ingredients

  • 3 cups nonfat Greek yogurt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 3/4 cup granola
  • 3 tbsp honey
  • 1 tsp lemon zest

Instructions

Wash the mixed berries thoroughly under cold water and let them drain in a colander.

In a medium-sized bowl, combine the berries with 1 tablespoon of honey and the lemon zest, gently tossing to coat the berries evenly.

Set out 4 serving glasses or bowls. Start by spooning about 1/2 cup of Greek yogurt into the bottom of each glass.

Add a layer of the mixed berry mixture over the yogurt, distributing evenly among the glasses.

Sprinkle a layer of granola over the berries in each glass.

Drizzle 1/2 tablespoon of honey over the granola (reserve the remaining for the top layer).

Repeat the layers: add another 1/4 cup of Greek yogurt, divide the remaining berries among the glasses, sprinkle more granola, and drizzle the remaining honey on top.

If desired, garnish with a bit more lemon zest or a few whole berries on top for decoration.

Serve immediately, or refrigerate for up to 1 hour before serving if you prefer the parfaits chilled.
