Preheat the oven to 200°C (400°F).
Peel and chop the potatoes into even-sized pieces. Place them in a pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
While the potatoes are cooking, trim the Brussels sprouts and cut them in half. Toss the Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the preheated oven for 20-25 minutes until tender and caramelized, stirring halfway through.
In a small saucepan over medium heat, combine the honey with a tablespoon of water. Bring to a simmer and add the sliced ham, turning to coat and heat through, about 3-5 minutes. Remove from heat and keep warm.
Once the potatoes are tender, drain them and return to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
Serve the honey-glazed ham alongside the mashed potatoes and roasted Brussels sprouts. Enjoy!
