Ingredients

  • 500 g Lean ground beef
  • 1 large Onion
  • 1 large Bell pepper
  • 400 g Canned diced tomatoes
  • 400 g Kidney beans
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Oil
  • 1 box Cornbread mix
  • 1 cup Water

Instructions

Dice the onion and bell pepper into small pieces.

Heat oil in a large pot over medium heat. Add the diced onion and bell pepper and sauté until they are soft, about 5 minutes.

Add the lean ground beef to the pot and cook until fully browned.

Drain any excess fat from the pot, if necessary, then stir in the chili powder, cumin, garlic powder, salt, and black pepper.

Add the canned diced tomatoes (with their juices) and kidney beans to the pot. Bring the mixture to a simmer.

Cover the pot, reduce heat to low, and let simmer for 45 minutes, stirring occasionally.

While the chili is cooking, prepare the cornbread according to the package instructions. This usually involves combining the mix, water, and sometimes an egg, then baking until golden brown.

Once the chili has simmered, taste and adjust seasonings as necessary.

Serve the chili hot in bowls with slices of the freshly baked cornbread on the side.
