Main CourseChiliComfort Food

Ingredients

  • 12 oz lean ground beef (85%)
  • 1 15 oz can kidney beans
  • 1 14 oz can diced tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium bell pepper
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 cup beef broth
  • 1 package cornbread mix
  • 1 tbsp olive oil

Instructions

1

Preheat your oven according to the instructions on the cornbread mix package.

2

Chop the onion and bell pepper into small pieces. Mince the garlic cloves.

3

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté for 3-4 minutes or until the onion is translucent.

4

Add the ground beef to the pot. Cook, breaking it apart with a spoon, until browned, about 5-7 minutes.

5

Stir in the chopped bell pepper, chili powder, cumin, salt, and pepper. Cook for another 2 minutes to release the flavors.

6

Add the diced tomatoes, undrained kidney beans, and beef broth to the pot. Bring to a simmer and let it cook for 15-20 minutes, stirring occasionally.

7

While the chili is simmering, prepare the cornbread batter according to the package instructions. Pour the batter into a greased baking dish and bake according to the package times.

8

Serve the hot chili in bowls with a slice of cornbread on the side.
