Ingredients

  • 5 oz salmon fillet
  • 3/4 cup cooked quinoa
  • 1 cup mixed vegetables (broccoli, bell pepper, carrots)
  • 1 tbsp olive oil
  • 1 unit lemon
  • 2 cloves garlic
  • 1 tsp mixed herbs (e.g., thyme, oregano, parsley)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it with a little olive oil.

Place the salmon fillet on the prepared baking sheet. Drizzle with half a tablespoon of olive oil, and season with salt and black pepper. Squeeze the juice of half a lemon over the salmon.

Mince the garlic cloves and sprinkle them over the salmon. Add mixed herbs on top for additional flavor.

In a mixing bowl, toss the mixed vegetables with the remaining half tablespoon of olive oil, salt, and pepper to taste.

Spread the vegetables around the salmon on the baking sheet.

Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

While the salmon and vegetables are baking, reheat the cooked quinoa by microwaving it or warming it on the stovetop with a dash of water.

Once the salmon and vegetables are done, remove them from the oven. Serve the salmon over the bed of quinoa with the roasted vegetables on the side.

Garnish with slices of the remaining lemon if desired. Enjoy your meal!
