Preheat your oven to 400°F (200°C).
Place the salmon fillet on a baking sheet lined with parchment paper or aluminum foil.
In a small bowl, mix 1 tablespoon of olive oil, juice from 1 lemon, 2 cloves of minced garlic, 2 tablespoons of chopped herbs, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
Brush the olive oil mixture over the salmon fillet evenly.
Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork.
While the salmon is baking, heat the roasted vegetables if they have cooled, or prepare them if not already cooked. You can sauté them briefly in a pan with a splash of olive oil if desired.
Reheat the cooked quinoa if necessary by steaming or microwaving.
Once the salmon is done, assemble your plate by serving the salmon atop the quinoa and surrounding it with the roasted vegetables.
Garnish with extra herbs and a wedge of lemon, if desired. Serve immediately while warm.
