Preheat your oven to 400°F (200°C).
Cook the quinoa according to package instructions until fluffy, usually about 15 minutes. Set aside.
Chop the broccoli, carrots, and bell pepper into bite-sized pieces. Mix them together in a bowl with 1 tablespoon of olive oil, some salt, and pepper.
Spread the vegetables on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes until they are tender and slightly golden.
In another bowl, mix the remaining tablespoon of olive oil, minced garlic, juice of half the lemon, thyme or dill, salt, and pepper.
Place the salmon fillets on a separate baking sheet lined with parchment paper. Brush the oil mixture over the salmon.
Bake the salmon in the oven (at the same 400°F) for 12-15 minutes, or until it is cooked through and flakes easily with a fork.
Once everything is cooked, assemble the plate by serving the quinoa, placing the roasted vegetables around it, and the baked salmon on top. Garnish with a wedge of lemon on the side.
