Ingredients

  • 5 oz Salmon fillets
  • 3/4 cup Quinoa
  • 1/3 cup Broccoli
  • 1/3 cup Carrots
  • 1/3 cup Bell pepper
  • 3 tbsp Olive oil
  • 1 medium Lemon
  • 3 cloves Garlic
  • 1 tsp Fresh thyme
  • 1 tsp Fresh dill
  • to taste - Salt
  • to taste - Black pepper

Instructions

Preheat your oven to 400°F (200°C).

Cook quinoa according to package instructions. Typically, you'll bring 1 1/2 cups of water to a boil, add 3/4 cup quinoa, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed.

While quinoa is cooking, prepare the vegetables. Cut broccoli, carrots, and bell pepper into bite-sized pieces.

In a large bowl, toss the cut vegetables with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on a baking sheet.

Roast the vegetables in the preheated oven for about 15-20 minutes or until tender and slightly caramelized.

While vegetables are roasting, prepare the salmon by placing fillets on a parchment-lined baking sheet. Drizzle with 1 tablespoon of olive oil, squeeze juice from half a lemon, and season with salt, pepper, minced garlic, thyme, and dill.

Once the vegetables have been roasting for about 10 minutes, place the salmon in the oven. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Gently fluff the cooked quinoa with a fork and add a little lemon juice for zest.

Serve each plate with a salmon fillet on a bed of quinoa along with a side of roasted vegetables. Garnish with additional lemon slices if desired.
