Baked Salmon with Roasted Sweet Potato & Steamed Broccoli

Ingredients

  • 5 oz Salmon fillet
  • 1 medium Sweet potato
  • 1 cup Broccoli
  • 1 tbsp Olive oil
  • 0.5 whole Lemon
  • 2 cloves Garlic
  • 1 tsp Mixed herbs
  • 1 cup Water

Instructions

Preheat the oven to 400°F (200°C).

Peel and cube the sweet potato. Toss with half of the olive oil, salt, pepper, and some of the herbs. Spread evenly on a baking sheet.

Place the sweet potato in the preheated oven and roast for 25-30 minutes, turning halfway through, until tender and slightly crispy.

While the sweet potato is roasting, prepare the salmon fillet. Place it on a piece of foil. Drizzle with the remaining olive oil, juice from half a lemon, minced garlic, salt, pepper, and the rest of the herbs. Close the foil to form a pouch.

Place the salmon pouch in the oven alongside the sweet potato for the last 12-15 minutes of baking, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, bring a pot of water to a boil with a steaming basket placed on top. Add the broccoli to the steaming basket, cover, and steam for about 5-7 minutes, until bright green and tender-crisp.

Once everything is cooked, assemble the dish by placing the salmon fillet, roasted sweet potatoes, and steamed broccoli on a plate.

Serve immediately with additional lemon wedges if desired.
