Preheat your oven to 400°F (200°C).
Wash and peel the potatoes. Cut them into even-sized chunks, approximately 1-inch cubes.
Fill a pot with water and add a pinch of salt. Bring it to a boil over high heat.
Add the potato cubes to the boiling water and cook for about 10 minutes, until they are just tender. Drain the potatoes in a colander and let them cool slightly.
In a large oven-proof skillet, heat the olive oil over medium-high heat. Add 2 tablespoons of butter and let it melt.
Add the boiled potato cubes to the skillet and toss them in the butter and olive oil mixture. Sprinkle with salt and black pepper.
Transfer the skillet to the preheated oven and roast the potatoes for 20-25 minutes, turning them halfway through, until they are golden brown and crispy on the outside.
Remove the skillet from the oven. Add the remaining 2 tablespoons of butter, and gently toss the potatoes to coat them with the melted butter.
Serve the peppery butter potatoes hot as a side dish.
