In a small saucepan, combine 50 g rolled oats, 200 ml water, and 250 ml of low-fat milk (or unsweetened almond milk). Add a pinch of salt.
Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low. Stir occasionally and cook the oats for about 5-7 minutes, or until they have absorbed most of the liquid and have reached your desired consistency.
While the oats are cooking, peel and slice the banana. Set aside a few slices for topping.
Once the oats are cooked, stir in 1 tbsp almond butter and 1 tsp cinnamon, mixing well until the almond butter is fully incorporated.
Add most of the banana slices to the oatmeal and stir gently to combine.
Serve the oatmeal in a bowl, topped with the reserved banana slices. You can sprinkle a little extra cinnamon on top if desired.
