Prepare the ingredients by finely chopping the onion and mincing the garlic cloves.
Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
In a crockpot, add the sautéed onion and garlic, diced tomatoes, tomato paste, and chicken broth. Stir well to combine.
Season the mixture with dried oregano, dried basil, salt, and black pepper. Stir until the spices are well mixed.
Place the chicken breasts on top of the tomato mixture in the crockpot.
Cover the crockpot and cook on low for 6 hours or until the chicken is thoroughly cooked and tender.
Once cooked, shred the chicken directly in the crockpot using two forks and mix it well with the tomato stew.
Serve the stew hot. Optionally, garnish with fresh basil or parsley.
