Bright, smoky, and texturally addictive—thin slices of chipotle‑lime marinated flank steak are quickly grilled to a tender char, then piled into warm corn tortillas with a crisp winter cabbage slaw, creamy avocado, and a squeeze of lime. The interplay of smoky heat, citrus brightness and crunchy slaw makes these tacos feel like restaurant fare but come together in under 30 minutes.
Bring the steak up to room temperature for 8–10 minutes before cooking. This reduces the chill and helps the steak sear evenly; a quick sear on cold meat can lead to uneven doneness.
Make the slaw dressing: in a small bowl whisk the Greek yogurt, 1/2 tablespoon of the olive oil, juice of 1/2 lime, a pinch of salt, freshly ground black pepper, and 1/2 teaspoon of the ground chipotle. The yogurt gives body and a slight tang while the chipotle adds smoky heat—mixing the dressing first lets flavors meld while you cook.
Toss the shredded cabbage with the dressing and the chopped cilantro; taste and adjust salt, pepper, or a splash more lime if it needs more brightness. Let the slaw rest while you heat the pan so the cabbage softens slightly but keeps a fresh crunch.
Heat a heavy skillet or cast‑iron pan over high heat until very hot—about 3–4 minutes. A hot pan is essential to get a quick caramelized sear that delivers flavor through Maillard browning.
Pat the marinated flank steak slices dry with paper towel (this promotes better browning), season lightly with salt and pepper, then add 1/2 tablespoon olive oil to the hot pan and lay the steak slices in a single layer. You want high heat and quick contact—sear for about 45–60 seconds per side for thin slices to develop a dark edge without overcooking the interior. Work in batches if your pan is crowded.
Remove the steak to a plate and let it rest for 2 minutes. Resting lets residual heat redistribute and prevents juices from running out the moment you slice or bite into the meat.
Warm the corn tortillas directly over a gas flame (use tongs) or in a dry skillet for about 20–30 seconds per side until they are fragrant and pliable. Warming over a flame creates small charred spots that add smoky flavor and pliability so the tortillas don't crack when folded.
Slice the steak across the grain into thin ribbons. Cutting against the grain shortens the muscle fibers and makes each bite tender—critical for flank steak.
Assemble the tacos: divide the warm tortillas, place equal portions of sliced steak into each, top with a generous pile of the cabbage slaw, a few avocado slices, and scatter the remaining chopped cilantro. Finish with a light sprinkle of the remaining 1/2 teaspoon chipotle (if you like extra smoke) and a final squeeze of lime.
Serve immediately so the tortillas remain warm and the slaw is crisp. If you must hold them, place assembled tacos on a warm plate and cover loosely with foil for up to 10 minutes—this keeps them warm without steaming them soggy.
