Silky, savory-sweet miso–maple tofu crumbled and gently scrambled with bright turmeric and wilted baby spinach, served on crisp, toasted gluten-free sourdough. The miso adds umami depth while a touch of maple balances it with a glossy sweetness; toasted sourdough and sesame oil give toasty, nutty contrasts — a refined vegan brunch that eats like a restaurant plate but comes together in under 20 minutes.
Toast the gluten-free sourdough slices and warm the serving plates. Toasting the bread first ensures it will stay crisp under the scramble and warming plates keeps the dish at the right temperature for serving.
Prepare the tofu: wrap each block in a clean kitchen towel and press gently for 5 minutes to remove excess water (extra-firm won't release as much, but a quick press improves texture and helps the tofu absorb the miso–maple glaze). Crumble the tofu with your hands or a fork into pea-to-crumb sized pieces — this mimics scrambled eggs and increases surface area for flavor.
Make the miso–maple slurry: in a small bowl, combine the white miso, maple syrup and the turmeric pinch. Stir until smooth. The miso brings umami and salt, maple adds brightness and caramel notes, and turmeric gives a warm yellow color and subtle earthiness — mixing them first ensures even distribution through the tofu.
Heat a nonstick skillet over medium heat until hot but not smoking (about 2 minutes). Add the sesame oil and swirl to coat. The toasted sesame oil is key for a fragrant, nutty backbone; heating it briefly releases those oils.
Sauté the green onions: add the sliced green onions and cook 30–45 seconds until fragrant and slightly softened. This step builds a fresh aromatic base for the scramble without browning them excessively, which keeps their color and bright flavor.
Add the crumbled tofu to the pan and spread it into an even layer. Let it sit untouched for 45–60 seconds to develop light color on the bottom. Browning some pieces adds texture and Maillard flavors that make the scramble more savory and complex.
Stir and continue to cook the tofu for 2–3 minutes, tossing frequently to encourage small golden edges. When the tofu is warm through and starting to take color, lower the heat to medium-low and spoon the miso–maple slurry over it. Cook for another 1–2 minutes, stirring to coat so the miso gently warms and melts into the tofu — you want it to flavor without burning (miso burns quickly at high heat).
Add the baby spinach in two batches: fold in half the spinach and stir until wilted (about 30 seconds), then add the remaining spinach and wilt. Wilted spinach integrates into the scramble, releases moisture to mellow the miso, and adds bright color and nutrients.
Taste and season: because white miso is salty, check seasoning before adding extra salt. Add a small pinch of salt only if needed, and finish with a few grinds of black pepper. If you want a touch more sweetness or gloss, add a few drops more maple and stir through.
Assemble and serve: divide the toasted sourdough between two plates, pile the miso–maple tofu scramble on top, and scatter any extra sliced green onion over the dish for freshness. Serve immediately so the toast remains crisp and the scramble warm.
Optional finishing (restaurant touch): drizzle a scant teaspoon of sesame oil over the assembled plate or sprinkle toasted sesame seeds and a squeeze of lemon if you like. The oil adds sheen and an extra layer of sesame aroma.
