Spaghetti Aglio e Olio

Total: 20 minutes
ItalianPastaVegetarian

Ingredients

  • 100 g spaghetti
  • 2 pieces garlic cloves
  • 4 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • 2 tbsp parsley
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

1

Bring a large pot of water to a boil. Add 1 teaspoon of salt, then add the spaghetti and cook according to package instructions until al dente.

2

While the pasta is cooking, mince the garlic cloves finely and chop the parsley.

3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until golden, about 1-2 minutes. Be careful not to burn the garlic.

4

Add the red pepper flakes to the skillet and cook for an additional 30 seconds, stirring occasionally.

5

Reserve 1/2 cup of pasta water and then drain the spaghetti.

6

Add the cooked spaghetti to the skillet with the garlic and peper flakes. Toss to coat evenly.

7

If the pasta seems dry, add a little reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.

8

Season with additional salt and black pepper to taste.

9

Remove the pan from heat and stir in chopped parsley.

10

Serve immediately, drizzling additional olive oil on top if desired.
