In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.

In another bowl, beat the egg and then whisk in the milk and vanilla extract.

Add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

Melt the butter in a large skillet over medium heat.

Pour 1/4 cup of the batter onto the skillet for each pancake, spreading evenly into a circle.

Cook until small bubbles form on the surface of the pancakes, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.

Remove from the skillet and keep warm. Repeat with the remaining batter.

Serve warm with your choice of toppings such as syrup, butter, or fresh fruit.
