Ingredients

  • 150 g quinoa
  • 100 g chickpeas
  • 30 g feta cheese
  • 200 g vegetables (such as cherry tomatoes, cucumber, bell peppers)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh herbs (such as parsley or mint)

Instructions

Rinse the quinoa under cold water until the water runs clear.

Transfer the quinoa to a medium saucepan, add 300 ml of water, and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until all the water is absorbed and the quinoa is fluffy.

While the quinoa is cooking, drain and rinse the chickpeas if using canned chickpeas. If using dried chickpeas, soak them overnight and then cook until tender.

Chop the vegetables into bite-sized pieces, and crumble the feta cheese.

Once the quinoa is cooked, fluff it with a fork and let it cool slightly.

In a large mixing bowl, combine the cooked quinoa, chickpeas, chopped vegetables, crumbled feta, and fresh herbs.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.

Pour the dressing over the salad and toss everything together until well combined.

Taste and adjust seasoning if necessary. Serve the salad slightly warm or chilled.
