Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the sliced onion and bell peppers to the skillet, stirring occasionally, and cook for about 5-7 minutes until they begin to soften and char slightly.
Remove the cooked vegetables from the skillet and set aside.
In the same skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the shrimp, and sprinkle with fajita seasoning, salt, and black pepper.
Cook the shrimp for 3-4 minutes on each side, or until they are pink and opaque.
Return the cooked vegetables to the skillet with the shrimp and toss to combine. Drizzle lime juice over the mixture and add lime zest.
Warm the flour tortillas on a separate skillet or microwave for a few seconds until pliable.
Serve the shrimp and vegetable mixture evenly on the warmed tortillas. Top with chopped cilantro.
Serve with cilantro-lime rice on the side. Enjoy while hot!
