Slice the onions into thick rings, about 1 cm wide, and carefully separate the layers. Use only the biggest rings and set aside.
Chop the shrimp into small pieces and season with salt and pepper. Set aside.
In a mixing bowl, combine all-purpose flour, baking powder, salt, and black pepper. In another bowl, whisk together the egg and milk.
Take an onion ring, fill it with chopped shrimp, then dip it into the flour mixture, ensuring it is well-coated.
Dip the floured onion ring into the egg-milk mixture, then coat it with breadcrumbs. Press gently to ensure the breadcrumbs stick well.
Repeat the coating process for all the onion rings.
Heat the vegetable oil in a deep frying pan over medium heat until it reaches 175°C (350°F).
Fry the stuffed onion rings in batches, turning occasionally, until golden brown and cooked through, about 3-4 minutes per side.
Remove the onion rings from the oil and drain on paper towels. Season with a little more salt immediately if desired.
Serve hot with your choice of dipping sauce.
