Grilled Chicken Salad

Grilled Chicken Salad

By Abigail Kwakye

Total: 20 minutes

Ingredients

  • 2 pieces grilled chicken breasts
  • 4 cups mixed greens
  • 1/2 pieces avocado
  • 1/4 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions

1

Start by slicing the grilled chicken breasts into thin strips. This will make it easier to mix into the salad and ensure every bite gets some chicken.

2

In a large salad bowl, combine the mixed greens and gently toss them together to mix the different types of greens evenly.

3

Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Slice the avocado into thin wedges and add them to the salad bowl with the mixed greens.

4

Halve the cherry tomatoes if they are large, and add them to the bowl with the greens and avocado.

5

Add the sliced grilled chicken on top of the salad mixture.

6

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create a dressing. Drizzle the dressing over the salad.

7

Toss the salad gently to combine all the ingredients and make sure everything is evenly coated with the dressing.

8

Serve immediately in individual bowls or plates, ensuring each serving has a combination of chicken, avocado, tomatoes, and greens.
