  • 2 cups Mixed vegetables (snap peas, bell peppers)
  • 1 cup Cooked brown rice
  • 2 tablespoons Soy sauce
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 1 inch Ginger
  • to taste - Salt
  • to taste - Pepper

Instructions

Prepare your ingredients by slicing the beef strips into bite-sized pieces if they are not already. Mince the garlic and ginger.

In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.

Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn it.

Add the beef strips to the skillet and season with salt and pepper. Stir-fry for about 3-4 minutes, or until the beef is browned and cooked through.

Once the beef is cooked, add the mixed vegetables to the skillet. Stir-fry for another 3-4 minutes, allowing the vegetables to become tender-crisp.

Pour 2 tablespoons of soy sauce over the beef and vegetable mixture. Stir well to combine and cook for an additional minute.

Remove the skillet from heat and serve the beef stir-fry over cooked brown rice.
