Crack the eggs into a bowl and beat them together with the salt and black pepper until they are well mixed.
Grate the cheddar cheese and set it aside.
Heat the butter in a non-stick frying pan over medium heat until it melts and starts to foam.
Pour the beaten eggs into the pan and let them cook undisturbed for about 1-2 minutes until the edges start to set.
Sprinkle the grated cheese evenly over the eggs.
Using a spatula, gently lift the edges of the omelette and tilt the pan to allow the uncooked eggs to flow to the edges.
Once the eggs are mostly set and the cheese has melted (about 2-3 minutes), fold the omelette in half using the spatula.
Slide the omelette onto a plate and serve immediately while hot.
