Preheat the oven to 400°F (200°C).
Peel the sweet potatoes and cut them into 1-inch cubes. Place them in a bowl.
Drizzle 1 tablespoon of olive oil over the cubed sweet potatoes. Add 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Toss to coat evenly.
Spread the seasoned sweet potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until tender and lightly caramelized, tossing halfway through cooking.
While the sweet potatoes are roasting, season the pork chops with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.
Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Once hot, add the pork chops to the skillet.
Cook the pork chops for about 4-5 minutes on each side, or until they are browned and cooked through (internal temperature should reach 145°F or 63°C).
Remove the pork chops from the skillet and let them rest for 5 minutes before serving.
Serve the pork chops alongside the roasted sweet potatoes. Enjoy!
