Preheat the oven to 375°F (190°C).
Season the pork chops with salt and black pepper on both sides.
Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a hot skillet over medium-high heat.
Add pork chops to the skillet and sear each side for about 3-4 minutes until browned.
Transfer the pork chops to a baking dish and place in the oven. Bake for an additional 15-20 minutes until fully cooked or until the internal temperature reaches 145°F (63°C).
While the pork is baking, wipe out the skillet and add the remaining olive oil. Heat over medium heat.
Slice the potatoes thinly. Add them to the skillet and sauté until golden brown and crispy, about 10-12 minutes. Season with salt and pepper to taste.
Mince the garlic and chop the rosemary finely. In a small saucepan, melt the remaining 2 tablespoons of butter and add the garlic and rosemary, cooking gently for 1-2 minutes until fragrant.
Once the pork chops are done, pour the herbed butter over the top.
Serve the pork chops hot with the sautéed potatoes on the side.
