Chop the bell pepper and onion into small dice. Wash and roughly chop the spinach.
Heat the olive oil in a large non-stick skillet over medium heat. Add the diced onion and bell pepper, cooking for about 5 minutes until they are soft.
While the vegetables are cooking, crack the eggs into a bowl, add salt and pepper, and beat them until well combined.
Add the chopped spinach to the skillet, stirring until wilted, about 2 minutes.
Pour the beaten eggs into the skillet with the vegetables, stirring continuously to cook the eggs until they are scrambled and fully set, about 3-5 minutes.
Warm the tortillas in a microwave or on a dry skillet until they are pliable, about 30 seconds to 1 minute.
Divide the scrambled eggs and vegetable mixture evenly among the warm tortillas. Sprinkle cheese on top of each, and add a spoonful of salsa.
Fold in the sides of the tortilla and roll it up to form a burrito. Serve immediately or wrap in foil to keep warm.
