In a medium bowl, crack open the 2 large eggs and whisk them until fully combined. Add salt and pepper to taste and mix well.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Once the oil is hot, add the 100g diced bell peppers to the skillet and sauté for 3-4 minutes until they are slightly softened.
Pour the whisked eggs over the sautéed bell peppers in the skillet. Allow the eggs to cook for 1-2 minutes without stirring until they start to set at the edges.
Gently stir the eggs and peppers together, allowing the mixture to cook for another 2-3 minutes until the eggs are fully cooked to your desired doneness.
Add the 50g of shredded cheese on top of the egg and pepper mixture. Cover the skillet with a lid for about 1 minute, allowing the cheese to melt.
While the cheese is melting, prepare the avocado by dicing the 50g into small pieces.
Once the cheese has melted, remove the skillet from the heat.
Serve the egg and bell pepper mixture in a bowl, topped with the diced avocado.
Optional: Garnish with additional salt, pepper, or hot sauce as desired and enjoy your Keto Breakfast Burrito Bowl!
