Ingredients

  • 300 g penne pasta
  • 250 g turkey Italian sausage (casings removed)
  • 2 cups marinara sauce
  • 1 cup part-skim ricotta
  • 1.5 cups shredded mozzarella
  • 1/2 cup parmesan cheese
  • 1/4 cup, chopped basil
  • 4 cups mixed greens
  • 1/4 cup vinaigrette
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Preheat your oven to 375°F (190°C).

Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, following the package instructions (usually about 8-10 minutes). Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the turkey sausage, breaking it apart with a spatula, and cook until browned and cooked through, about 5-7 minutes.

Add 2 cups of marinara sauce to the skillet with the cooked sausage. Stir until everything is well combined and heated through, then remove from heat.

In a large mixing bowl, combine the cooked penne, sausage-marinara mixture, 1 cup of ricotta cheese, 1 cup of shredded mozzarella, chopped basil, salt, and black pepper. Mix until evenly distributed.

Transfer the mixture to a baking dish. Top with the remaining 1/2 cup of shredded mozzarella and 1/2 cup of parmesan cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown on top.

While the ziti is baking, toss the mixed greens with vinaigrette in a separate bowl.

Once the ziti is done baking, remove from the oven and let it cool for a few minutes. Serve warm with the dressed mixed greens on the side.
