Begin by cleaning and drying your mixed berries thoroughly. You can use a strainer and paper towels to ensure all excess water is removed.
In a clear serving glass or bowl, add 1/4 cup of Greek yogurt as the base layer.
Next, evenly layer 1/6 cup of granola over the yogurt.
Add a layer of 1/4 cup of the mixed berries on top of the granola.
Drizzle 1/2 tablespoon of honey over the berries to add sweetness.
Repeat steps 2-5 to create a second layer: add another 1/4 cup yogurt, 1/6 cup granola, 1/4 cup berries, and drizzle remaining honey.
Top the parfait with 1 tablespoon of chopped walnuts for added crunch.
Optionally, garnish with a sprig of mint for a refreshing touch.
Serve immediately while the granola is still crisp.
