Total: 25 minutes
BreakfastVegetarianQuick Meals

Ingredients

  • 4 large Eggs
  • 2 cups Fresh spinach
  • 1 cup Mushrooms
  • 1 medium Tomato
  • 2 tablespoons Olive oil or butter
  • 4 slices Whole-wheat bread
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Instructions

1

In a small bowl, whisk the eggs with salt and black pepper until well combined. Set aside.

2

In a large non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the mushrooms and cook for about 3-5 minutes until they are soft.

3

Add the fresh spinach to the skillet with the mushrooms and cook until the spinach is wilted, about 2 minutes.

4

Dice the tomato and add it to the skillet. Stir well to combine all the vegetables.

5

Pour the whisked eggs into the skillet with the sautéed vegetables. Tilt the pan to ensure the eggs cover the entire base.

6

Cook on medium-low heat until the edges start to set. Gently lift the edges with a spatula, allowing the uncooked egg mixture to flow underneath.

7

Once the omelette is almost set on top, fold it in half. Cook for another 1-2 minutes until the inside is fully set.

8

While the omelette is cooking, toast the whole-wheat bread slices in a toaster.

9

Once the omelette is done, slide it onto a plate and serve it hot with whole-wheat toast.
