  • 1 lb chicken breast
  • 4 medium potatoes
  • 2 medium onions
  • 2 medium tomatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder

Instructions

Peel and dice the onions into small pieces. Dice the tomatoes. Set aside.

Wash and dice the potatoes into 1-inch cubes. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the potatoes and cook for about 15 minutes, turning occasionally until they are golden and tender. Remove from the skillet and set aside.

While the potatoes are cooking, slice the chicken breast into thin strips. Season with salt, black pepper, garlic powder, and dried oregano.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onions and cook for 2-3 minutes until they become translucent.

Add the seasoned chicken strips to the skillet with the onions. Cook for about 8-10 minutes, stirring occasionally until the chicken is fully cooked and no longer pink inside.

Add the diced tomatoes to the skillet with the chicken and onions. Continue to cook for another 2-3 minutes until the tomatoes start to soften.

Return the cooked potatoes to the skillet. Stir everything together and cook for an additional 2 minutes to ensure the flavors are mixed well.

Taste and adjust the seasoning if necessary. Serve hot.
