Peel and dice the onions into small pieces. Dice the tomatoes. Set aside.
Wash and dice the potatoes into 1-inch cubes. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the potatoes and cook for about 15 minutes, turning occasionally until they are golden and tender. Remove from the skillet and set aside.
While the potatoes are cooking, slice the chicken breast into thin strips. Season with salt, black pepper, garlic powder, and dried oregano.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onions and cook for 2-3 minutes until they become translucent.
